Why it is in the guide

The pub’s story

Panda & Sons is a modern New Town cocktail bar inside an older Georgian property, and its two histories should not be confused. Historic Environment Scotland attributes the wider 79-80 Queen Street corner tenement to James Tait in 1790-92 and records its Category A designation. The bar itself opened in November 2013. A contemporary founder interview described a five-year-vacant basement transformed over three months into a speakeasy-and-vintage-barbershop concept tied together by a fictional Panda family. The street-level barbershop, bookcase door and Prohibition tale are therefore theatre, not inherited premises history. The modern record is still substantial: Panda & Sons developed Switching around 2019 and now presents sub-zero research through its Brain Melting Society and Transcend menu. Europe’s 50 Best Bars ranked it number 20 in 2026 and awarded Transcend the Siete Misterios Best Cocktail Menu Award. The official site confirms 79 Queen Street and a current phone number, but publishes no hours; conflicting schedules elsewhere are not promoted as current fact.

During your visit

What to notice

  1. 01

The 1790-92 date and Category A designation belong to the wider Queen Street property; Panda & Sons opened in November 2013 and its modern themed interior is not certified by that listing.

  2. 02

The barbershop, bookcase, Prohibition setting and Panda family are deliberate theatre. The contemporary founder interview explicitly calls the family fictional.

  3. 03

The current official site confirms 79 Queen Street and 0131 220 0443 but publishes no hours. Legacy official and Apple Maps schedules conflict, so verify before travelling.

Sources & confidence

Nine sources separate property, business and theatre. HES controls James Tait's 1790-92 wider corner tenement and its Category A designation; the council confirms Panda and Sons' licensed identity and broader 79-80 Queen Street regulatory address. First-party and contemporary trade evidence date Panda & Sons to 2013. The January 2014 founder interview explicitly calls the Panda family fictional, while Time Out documents the modern barbershop and bookcase staging. The current official site supports today's address, phone and sub-zero research programme. Europe's 50 Best Bars supplies the exact 2026 number 20 rank, menu award and explicit 2019 Switching date. Apple Maps supplies a current locator coordinate only. No hours are published because the current official site gives none and the selected legacy official and Apple schedules conflict.

Research reviewed

  • SupportsStatutory Category A identity and 3 March 1966 listing date for the wider 79, 79A and 80 Queen Street and 5 and 6 North Charlotte Street property; James Tait's 1790-92 classical tenement; later alterations; and New Town context. It does not date Panda & Sons or authenticate its themed interior as historic fabric.

SupportsLegacy first-party page stating a November 2013 opening and presenting the Panda family, Prohibition speakeasy and vintage barbershop narrative as the venue concept. It publishes a legacy weekly hours schedule, but that schedule conflicts with the selected current Apple Maps listing and is not treated as verified current information.

SupportsCouncil licensed-premises dataset row pairing Panda and Sons with EH1 Ltd at 79-80 Queen Street, Edinburgh, EH2 4NF. It supports licensed identity, operator and the broader regulatory address; it does not establish an eighteenth-century bar, a basement-access description or fictional branding.

  • SupportsDated 2016 editorial account of the modern theatrical entrance: an American-barbershop presentation at street level, basement descent, faux bookcase door, wood panelling and panda props. It supports visitor experience and styling, not inherited barbershop or Prohibition history.

  • SupportsExact 2026 ranking at number 20 and Siete Misterios Best Cocktail Menu Award 2026 for Panda & Sons; founder Iain McPherson; modern barbershop and faux-bookcase presentation; and the bar's Switching and other sub-zero techniques. It is contemporary business evidence, not a property archive.
