The pub’s story
Whiski Rooms is a purpose-built 2011 whisky bar, restaurant, shop and tasting venue on North Bank Street, rather than an older pub merely trading under a new name. It followed Whiski Bar’s Royal Mile success: contemporary accounts say the Stills converted former gift-shop units at 4 and 6 and added the former Bank of Scotland at 7 to make three adjoining spaces. The operator announced opening in June 2011, with trade coverage placing the launch that summer; by 2013 it had won an SLTN whisky-bar award and housed the UK’s first on-trade Ardbeg Embassy. Today it combines Scottish food, more than 300 whiskies, a shop and daily guided tastings. Choose it for a structured tasting or a Princes Street-facing dram, not as a quiet traditional local. Its official site now lists 10:00-01:00 opening every day.
